Kristen’s Fixins is a place where I share easy, healthy-ish recipes from my southern kitchen. Almost all of my recipes contain less than 10 ingredients and take about 30 minutes to prepare. Because, we live in the real world! Everyone is so busy, and we need easy ways to start incorporating healthy foods so that we don’t have to continue to rely on fast and convenience foods that are making us all sluggish and sick.
A little bit about me.
I’m originally from North Carolina and now live in Richmond, VA. Cooking healthy and working on my personal wellness is a journey that I am on and have been for some time. I grew up eating delicious home-cooked southern food, as well as the Standard American Diet of fast food, candy, and all kinds of packaged junk foods. Hey, it was the 80s! I was obese as a child, and went to Weight Watchers for the first time in the 7th grade. When I became a teenager I really started to restrict my food and tried every tactic to lose weight, which like for so many young girls turned into an eating disorder. I really wasn’t free from this until I was pregnant with my first child and decided to take care of myself. In the process I started to learn how amazing the human body is, and just how much I had done to abuse it over the years. Yet it was still strong and wanted to be healthy. After that, I really didn’t know where to start. I gained a lot of weight and wasn’t able to ever lose more than a couple of pounds before I would gain it back.
So now after baby #2 I’ve begun this journey in healing myself. It is SO hard, but I’m slowly working on my food addictions and learning to make healthy foods for my family. I’m down 10 pounds, which might not sound like much, but it’s something I haven’t been able to do in many moons. I have found that the key is not giving up, even on days you decide to eat everything in your fridge! You have to wake up the next day and try again.
Through this journey I became interested in nutrition and wellness and decided to study this year with The Institute for Integrative Nutrition. I hope to inspire others and help them see that it is NEVER too late to get healthy.
