Steak bites are bite-sized pieces of a tender cut of steak, like sirloin, that are seasoned and seared on high to make them crispy and caramelized on the outside and tender on the inside.

Here’s everything you need to make this tasty steak bites appetizer:
- Olive Oil, for achieving that yummy caramelization
- Steak: I used 2 pounds of sirloin steak for this recipe
- Salt and Pepper, to season your meat
- Garlic Butter: you’ll need half of a recipe of my easy Garlic Butter – see recipe
- Fresh herbs for garnish (I like parsley but you can experiment with different flavors
What Steak to Use for Garlic Steak Bites
This recipe calls for sirloin because it is so tender, but you could use other cuts of meat as well like ribeye or New York strip steak. Tenderloin would be the most expensive but most tender cut for this recipe.
How to Cook Steak for Garlic Butter Steak Bites
Here’s the step-by-step instructions for making garlic steak bites:
- Pat steaks dry and cut into bite size pieces. Season generously with salt and pepper.
- Heat olive oil in a large skillet over high heat. Once heated, add steak in a single layer (you may have to cook them in batches). Cook for about 2 minutes without stirring and then give them a stir and cook for a couple minutes more, until browned on all sides and done to your liking. Remove from skillet to a serving dish. If cooking in batches add a little more olive oil to the pan before the next batch.
- Reduce heat to medium and add garlic butter. Allow to melt and then pour over steak bites.
- Garnish with chopped fresh parsley (optional) and serve with steak fries.
